Monday meal plan: Salmon, beef stew and more!

On the Prosser menu this week we have salmon, beef stew, bagels, herb & garlic chicken and more! Please share your meals this week as well!

Monday (It’s our orange themed meal of the week!)

Salmon
Mahatma saffron rice (5 oz is .69 at Lowes Foods through 9/25)
Steamed carrots (baby carrots good price at Lowes Foods through 9/25)
Cantaloupe (BOGO at Harris Teeter through 9/25)

Tuesday

Herb & garlic chicken in slow cooker (using free Ken’s Marinade from super doubles)
Baked sweet potatoes
Salad

Wednesday

Bagels & cream cheese
Noodle kugel (see recipe below and it is in the WRAL Recipe Database)
Fruit salad

Thursday

Beef stew in slow cooker (stew meat on sale at Harris Teeter through 9/25)
Potatoes, carrots, mushrooms and onions cooked with stew meat (good deals on potatoes, carrots and onions at Lowes Foods through 9/25)
Rolls
Tomato and cucumber salad

Friday

Pizza Night! - Dr. Oetker Ristorante frozen veggie pizza bought during super doubles for $2 each
Pear slices
 

Noodle Kugel Recipe

24 oz container of low fat cottage cheese
16 oz container of light sour cream
3/4 cup sugar
5 eggs, beaten
1/2 stick butter melted
1 Tbsp. imitation vanilla
12 oz wide egg noodles, cooked and drained
1 Tbsp cinnamon/sugar mix

Preheat oven to 350 degrees.

Mix all the ingredients except the noodles and cinnamon sugar. Stir in the noodles gently. Pour into a 13 x 9 inch baking dish. Sprinkle the top with cinnamon/sugar mix.

Bake 50 minutes to 1 hour. Cool about 5 – 10 minutes before serving.

The beef stew turned out good. I let my husband taste it to see if he approved and I had to stop him from continuing to eat... :)

nceducator and Faye-Thanks for the help with the beef stew. I've got it going in the crock pot now and I'm excited to see how it comes out. :)

Can't wait till Wednesday, my mom is making noodle kugal along with bagels & lox to break fast for Yom Kipper-its so good exspecially after fasting all day for a jewish holiday.

Sometimes I make my kugel with raisins and it is delicious. Italian plums sounds wonderful.

Yum - noodle kugel! The first time I had it, it had quartered (?) Italian plums baked into to. Really to die for. Still don't know what Italian plums look like in the store though.

We just got done having a few nights of beef stew that I made from a chuck roast on sale at Lowes. I think tonight we are having spaghetti with sausage, and tomorrow possibly caesar salad with shrimp and maybe garlic bread if I get around to baking some bread. After that, more freezer diving.

Thanks for sharing your meals, everyone! I see a number of cool weather dishes making their way into your fall menus like lasagna, chili and soup. I think I may make some homemade soup next week if it gets a little cooler. Thanks for the idea smolder!

erika - I sprinkle some pepper and garlic powder on about 1.5 - 2 lbs chicken and then top with about 1/2 bottle. Cook on low for about 5 hours (I check it at 5 hours and it is often done for medium size boneless skinless chicken breasts).

You can pretty much do this with any meat and any sauce combo. I don't cook on high in the slow cooker because it tends to dry out the meat (at least my slow cooker does).

You can add veggies like mushrooms, onions, potatoes, carrots, etc. but for this dish I am just cooking the meat. I am cooking the sweet taters in the oven.
