Kathy, this is my go to recipe for hamburger and hot dog rolls. Absolutely delicious, freeze beautifully (split first), and don't leave out the dried onion -- it does something magical to the flavor, but doesn't taste like onion. The creator of this recipe used to be a member of the original King Arthur Flour Baking Circle. She used to go by Moomie, but now goes by her real name, Ellen.

Thanks, Faye, for the info. Where in the store are the Texas toast croutons? Are they a frozen item? I don't think I've ever seen them, but I wasn't looking, either.

The chicken corn chowder is a great use-it-up soup. Cooked chicken, corn, leftover mashed potatoes (or instant to thicken), and a few strips of crumbled bacon are the main ingredients. We had mashed potatoes instead of rice with the roasted chicken last night, so I have what I need.

I made some homemade gravy with the pan drippings that was soooo good. I'm going to freeze the leftover gravy to use another night to dress up some blah chicken.

NCgirllovescats what is your recipe for hamburger/hotdog buns. Made them once and they came out terrible so I put them in oven to dry and ground them up into breadcrumbs. Waste not, want not.

I am willing to try again.

M- Leftovers, my husband I had my version of McD's McRib - leftover pork roast w/BBQ sauce, pickles, onions on roll/bread, sweet potato fries, steams veggies - rest of family had leftover spaghetti - T - Stuffed peppers, green beans and salad, W - Meatloaf, mashed potatoes and veggies, salad Th-Leftovers F-to be determined.

jdouglas - I use 2 bags of the Texas Toast brand croutons (we've used the Seasoned or Butter and Garlic flavors and they are are great!). It's such a simple dish. The croutons soak up the egg and make a great soft "crust". For me, the more veggies the better. Make half the recipe in an 8 x 8 to see if you like it (you will) ;-)

Your chicken corn chowder sounds delicious!

Only a couple of meals planned so far: roast chicken tonight with a wild rice blend and a salad, and tomorrow chicken/veg/barley soup or chicken corn chowder with the leftover chicken. This last one is subject to change to chicken with Bisquick dumplings, depending how much chicken is left over.

Faye, your breakfast casserole really does sound good and is one of my faves, but it is also one of those things that I have never made even close to successfully, regardless of the recipe. (You know how some things you just can't cook? This is one of them.) So, please tell me more about the texas toast croutons. I am not familiar with them at all, but maybe they will help me!

I'm sorry, but the thumbnail of that breakfast casserole looks way too much like the picture the Mars Opportunity rover took of a rock with nodules that had the scientists all aflutter this past week. I think you have solved the mystery for them. :-) But it looks like a good dinner option. Breakfast is always one of my favorite dinners!
