Monday meal plan: Southwestern chicken, shrimp, salmon & more!

On the menu for the first week of school we have Southwestern chicken, creamy shrimp & pasta casserole, omelet night, salmon burgers and more! What's on your menu this week....or even just tonight?

Monday

Baked Southwestern Chicken Breasts (using Kraft Southwestern Fresh Take) – I cut the boneless skinless chicken breasts in half so they are like large chicken tenders and then coat each tender with the cheese and breadcrumb mixture. (chicken breast is on sale this week at Lowes Foods through 8/28 for $1.97/lb and was a very good deal last week at HT with the Buy 2 Get 3 Free deal)

Spanish rice

Creamed spinach

Cantaloupe ($1.50 at Food Lion through Tuesday 8/28)

After school today, my youngest and I are going to make homemade banana bread - yum!

 

Tuesday

Omelet night (with a variety of fillings to choose from like mushrooms, green peppers, spinach, onions, black olives, cheese, Morningstar veggie bacon) – Using Davidson’s Eggs on sale BOGO at Harris Teeter through Tuesday 8/28 using .75/1 printable coupon

Sweet potato fries (bought with Lowes Foods meal deal this week through 8/28)

Apple slices


Wednesday

BBQ chicken in the slow cooker served on Bolillo rolls

Pasta salad with green peppers, onion, tomato, black olives and light mayo (and pasta salad seasoning from McCormick)

Tomato and cucumber salad


Thursday

Shrimp and pasta casserole with Classico light alfredo sauce (on sale at HT this week), corn, mushrooms and broccoli with garlic, pepper and some fresh basil from my daughter’s basil plant

Garlic bread (from the Lowes Foods meal deal through 8/28)

Salad


Friday

Salmon burgers on wheat rolls

Salad

Nakabi, thanks for posting the naan recipe! I agree about garlic -- it makes everything taste better ;) I do have a question, though -- roughly how much is 7 grams of yeast? I don't think my kitchen scale does grams. I'm guessing about 2 to 2 1/2 teaspoons?

I'm waiting to hear what midnight pasta is too. I'm thinking it's either A) something really quick like a garlic and oil yum! or B) pasta made with squid ink? I've never been able to bring myself to try the latter.

Wifeandkids, my oldest has braces and doesn't eat nuts so I leave them out of baked good for now. I love walnuts in banana bread, normally.

I'm with foodgirl - what is midnight pasta, clabeff??

The banana bread my daughter and I made this afternoon was AMAZING! Hubby already begged me to make another loaf tomorrow. We plowed through 1/2 a loaf today! I told everyone they had to leave the rest alone so we had some for tomorrow. Below is a link to the recipe. I usually use 1/2 white and 1/2 whole wheat flour, but I was out of ww flour so used all white flour. I also lowered the sugar amount to 3/4 cup. I cooked it in a 5" x 9" loaf pan for 50 minutes.

smolder - I agree - Nakabi could definitely give cooking lessons! Maybe you could start teaching African cooking at the community college (in your spare time between work and the kids! lol). Seriously, you really have such interesting meals!

in a large bowl mix together everything except for vegetable oil until it is a smooth dough. cover with a wet cloth and leave for one hour until it rises. after one hour add vegetable oil, knead until oil mixed in. pull of pieces to desired size and roll out on floured surface to size you want. cook on grill in cast iron pan until slightly charred to desired crispiness. make sure to watch carefully since they will burn easy. once finished, spread a little melted garlic butter on them. if you have questions or this didnt make sense, let me know. enjoy :)

foodgirl, jdouglas, & smolder-thank you for your nice comments! roti is a bit easier to make than naan, but garlic naan tastes better to me. you will need 3 cups white flour, 1/2 cup water, 3/4 wholemilk, 2 tablespoon garlic paste, 4 1/4 tablespoon vegetable oil, 1/2 teaspoon cumin, 3 tablesppon butter, 1/2 teaspoon white sugar, pinch of salt, 7 gram dry yeast. recipe following

Parmesan encrusted chicken breasts ( $1.97/lb at lowes foods) midnight pasta, and fresh bruchetta!

I think nakabi should give cooking lessons. :)
