My favorite pasta salad recipe is: Rainbow spiral pasta, 1 can kidney beans (15.5 oz.) drained & rinsed, 16 oz. frozen mixed veggies (w/ green beans, carrots, corn - sometimes you can find it w/ lima beans; which is good), 1 fresh green pepper diced, 1 medium red onion diced. The dressing is homemade: 1/2 cup vinegar, 1/2 cup olive oil, 3/4 cup sugar, salt & pepper. This is a very colorful & delicious salad!

thank you Faye. I love to cook and planning my meals helps me stay on track. I try to do at least one new entree a week to keep the versatility. This week it will be the crusted salmon and asparagus w/poached egg. Thankfully my ideas usually turn out well, but we shall see :)

Is your hubby just in awe of your tasking skills?...cause I sure am!...and I'm coming to your house to eat this week...everything sounds yummy!

Nakabi - I just love reading your meal plan - so creative and your meals sound delicious!

msgooch - I usually use a tri color pasta or shells, a variety of veggies including green and/or red peppers, grape tomatoes, green or vidalia onions, canned mushrooms and black olives. Then I use a combination of light mayo and light sour cream for the dressing. I've used this same recipe for a million years and the kids and hubby love it.

msgooch2000-I make pasta salad that everyone loves :) tricolour pasta made by Muellers (I think)...cook pasta according to directions. chill. chop up green olives, fresh mozzerella cheese, half tin diced tomatoes, feta cheese,& drizzel the Farmfresh Hidden valley with herbs dressing. chill completely...its very versatile so you can add what you like, but that's how I usually make it.

M-Eggplant parmesan, Caesar salad, whole wheat rolls T-Grilled striper, couscous salad, baked sweet potato chips W-Chicken divan, garden salad, croissants Th-Sesame crusted salmon, roasted red potatoes w/rosemary & beets, steamed green beans F-Spinach/goat cheese stuffed chicken, wild rice pilaf, asparagus w/poached eggs

Funny that you have pasta salad listed....because I had a strange craving to make it this weekend! Anyone have any good tried-and-true recipes for pasta salad? I promise to share! ;-)
