Monday meal plan!

This is an extremely busy week for us. I am hosting a very large family event that runs Friday through Sunday so I have no time for time-consuming meals this week. With that said, I’ll still be preparing a frugal dinner each night and skipping the drive-through.

What’s on your meal plan?


Italian pasta bake with whole wheat penne pasta, pasta sauce, chicken breast cubed, cheese, black olives, green pepper, onions, mushrooms, garlic, pepper and Italian herbs including some fresh basil my daughter is growing.(I doubled up on the pasta I cooked last night so I only had one set of dishes to do last night but still have plenty of pasta for tonight's meal)

Steamed carrots



Breakfast for dinner!

Egg and cheese tortilla roll-ups with salsa (eggs were .99/dozen at Walgreens through last Saturday)

Morningstar veggie bacon

Cantaloupe ($1.29 at Aldi and I am price matching at Walmart)


Homemade veggie pizzas using Harris Teeter pizza dough (my oldest daughter rolls out the dough and then puts on the toppings after the dough has pre-cooked for about 8 minutes)



Veggie burgers

Sweet potato fries

Tomato and cucumber salad

Friday – Sunday: Fun times with family and friends!

    Amomoftwo - My oldest has become more interested in cooking and really enjoys baking. My younger one enjoys enjoying what the older one makes! :-)

    My favoite part of you meal plan? That your daughters are cooking with daughters were always in the kitchen with me and it has really paid off for them in college and now one on her own!

    dkg-I also use a pizza stone and the crust is always crispy so I'm glad to know I' haven't been missing out on something :)

    dkg - I also use a pizza stone so maybe I'll try not pre-cooking it next time. I always have pre-cooked it, so thank you for sharing that you use a stone and it cooked through just fine without pre-cooking the crust. :-) And I am not a pizza guru either....although I think I could eat it every

    astamper - My oldest will eat almost anything I serve, thankfully. My youngest is more picky. She really doesn't like fish so on the nights I serve salmon, she makes herself a sandwich. I don't cook multiple meals, but she can choose a healthy substitute that she makes herself. There are foods I really dislike as well so I wouldn't want to be forced to eat liver for instance. Just not going to happen. :-) So I understand if some foods just aren't her thing. I'll keep serving them and encouraging her to try them.

    There are times when the youngest will say she doesn't want something (that I know she has eaten many times before) but once it is on the table and everyone else is eating it, she usually eats a serving as well. It happened last night, actually. She said she didn't want whole wheat pasta so I said she could just have the chicken and fruit and she didn't have to eat pasta if she didn't want to. Five minutes into the meal, she was spooning some on to her plate! LOL

    How do you get your kids to eat whatever you plan? I had a picky eater who would starve before she would eat something she didn't like. She's 20 now so it's a moot point, but I still wonder how you do it.

    we used our pizza stone for the first time last night and did not precook the crust. It came out perfect. I think if you are not using a pizza stone that you do need to precook the crust. But I am not a pizza guru...that's just my two cents.

    I like to pre-cook the crust so I know the dough is done and the cheese doesn't get too brown being in there the extra 8 minutes. Your salmon cakes sound great! And so does your PB pie!!

    Faye-your Wednesday meal sounds good. Does cooking the dough 8 minutes prior to putting the toppings on make much of a difference?

    M-Salad topped w/leftover steak, whole wheat rolls, oatmeal/raisin cookies
    T-Chicken taco bowls, lemon bars
    W- Garlic & lemon herb chicken, quinoa, steamed asparagus, leftover lemon bars
    Th-Salmon cakes, baked sweet potatoes, green beans, ice-creme cake
    F-Adobo, rice, steamed veggies (whatever I pick from the garden), peanut butter pie
