This is an extremely busy week for us. I am hosting a very large family event that runs Friday through Sunday so I have no time for time-consuming meals this week. With that said, I’ll still be preparing a frugal dinner each night and skipping the drive-through.
What’s on your meal plan?
Monday
Italian pasta bake with whole wheat penne pasta, pasta sauce, chicken breast cubed, cheese, black olives, green pepper, onions, mushrooms, garlic, pepper and Italian herbs including some fresh basil my daughter is growing.(I doubled up on the pasta I cooked last night so I only had one set of dishes to do last night but still have plenty of pasta for tonight's meal)
Steamed carrots
Rolls
Tuesday
Breakfast for dinner!
Egg and cheese tortilla roll-ups with salsa (eggs were .99/dozen at Walgreens through last Saturday)
Morningstar veggie bacon
Cantaloupe ($1.29 at Aldi and I am price matching at Walmart)
Wednesday
Homemade veggie pizzas using Harris Teeter pizza dough (my oldest daughter rolls out the dough and then puts on the toppings after the dough has pre-cooked for about 8 minutes)
Salad
Thursday
Veggie burgers
Sweet potato fries
Tomato and cucumber salad
Friday – Sunday: Fun times with family and friends!

There are times when the youngest will say she doesn't want something (that I know she has eaten many times before) but once it is on the table and everyone else is eating it, she usually eats a serving as well. It happened last night, actually. She said she didn't want whole wheat pasta so I said she could just have the chicken and fruit and she didn't have to eat pasta if she didn't want to. Five minutes into the meal, she was spooning some on to her plate! LOL

How do you get your kids to eat whatever you plan? I had a picky eater who would starve before she would eat something she didn't like. She's 20 now so it's a moot point, but I still wonder how you do it.

M-Salad topped w/leftover steak, whole wheat rolls, oatmeal/raisin cookies T-Chicken taco bowls, lemon bars W- Garlic & lemon herb chicken, quinoa, steamed asparagus, leftover lemon bars Th-Salmon cakes, baked sweet potatoes, green beans, ice-creme cake F-Adobo, rice, steamed veggies (whatever I pick from the garden), peanut butter pie
