We have a very busy week with lots of appointments and activities on the calendar so here’s our easy menu. Next week is even busier so it may be cereal and eggs every night!

I just noticed that you asked about favorite easy meals. Having premade components make putting together an easy dinner simpler. I'm thinking planned leftovers reinvented -- like if you are making grilled chicken breasts early in the week, make extra and they can be added to salad, pasta, spaghetti sauce, fajitas, soup. Some hardboiled eggs turn into egg salad sandwiches, cobb salad if you have a bit of cooked chicken to add to it, or deviled eggs for my new fave, hor d'oeuvres night (aka I'm too tired to assemble a big meal). Deviled eggs, cheese and crac*ers or a sliced baguette, some olives, maybe a few cooked shrimp with cocktail sauce, some celery and carrot sticks with or without a dip for a veg. Just a few ideas.

Found this recipe today on the Kraft website for Skillet Parmesan Zucchini - looks delicious!

jdouglas - I did not make the parm squash cakes last week - we just sauteed the squash and onions - got in too late to make them. Will definitely be on the menu again soon, though.

I love fajitas - easy and delicious. I put out the various options in salad bar style so everyone can create their fajitas with the toppings they prefer. We use shrimp, tomatoes, romaine lettuce, sauteed peppers, onions and mushrooms, cheese, guac, light sour cream, salsa, corn, rice. Yum....getting hungry....

M: waffles, scrambled eggs and veggie sausage T: veggie quesadillas with black beans W: tofu curry stir fry Th: pasta with pesto sauce Friday: out of town

M- Meatloaf (grounded beef, pork, and turkey) with homemade mashed potatoes and steamed green beans. T- Grilled shrimp, scallops, corn on the cob, and squash. W- jdouglas' spaghetti sounds good so spaghetti and a salad. TT- Tacos with grounded turkey and all the fixings. F- Date night.

Your shrimp & veggie fajitas sound really good, Faye! Did you make the parmesan squash cakes last week? Was wondering how they turned out.

Nothing much planned this week, but tonight we are having cheese omelets with bacon and tomatoes -- still haven't eaten yet because our prince of naughty pup managed to escape right out the front door, and after a four hour jaunt, we finally got him. I'm thinking caesar salad with shrimp one night. And I found a stash of meatballs I forgot I had, so spaghetti and meatballs or meatball parm wedges one night.

If I come up with anything good, I'll post again. :)
