Monday meal plan

This week’s meal plan is simple and doesn’t involve a lot of oven use. I am still sick so I won’t be spending hours in the kitchen. And it’s still really hot, so they oven won’t be on for hours at a time.

What’s on your menu this week?


Veggie burgers

Steamed carrots



Veggie and cheese quesadillas with spinach, green peppers, squash, onions, tomatoes, cheese



Salmon burgers

Sweet potato fries



Grilled chicken marinated in Italian dressing

Tomato and cucumber salad

Pasta salad


I’m working late so hubby is in charge of dinner

    I actually have done pretty good this week sticking to my meal plan! Miracles happen!
    M - My Bday - Hubby cooked the one thing he knows how to cook: Impossibly Easy Cheeseburger Pie!:) He also made me a cake and it was awesome (his first ever in 42 yrs).
    T - Veggie/Beef Soup
    W - Hubby was off so we were home all day. Lunch - Paninis, baked fries and Dinner - Homemade Chicken and Dumplings
    Th - Hot Dogs and Mac N' Cheese (threw together while I made plum jam and processed tomatoes)
    F - Leftovers - We have tons!

    I love reading your menus AND your hysterical comments! I'm not sure I remember how to turn on the oven, but if it's cool enough - those sweet potato fries are calling my name. :-)

    jdouglas13-you are more than welkom to come eat some kabobs with us! supper is at 7:30 normally. we don't drink soda, so if you want, you will need to bring it :)

    Oh Nakabi, your lamb kabobs sound sooooo good! Used to be one of my faves but haven't had in forever since my dear spouse hates all things lamb including the smell. (In return, for me she has given up all things chili and sauerkraut~~~~shiver!) The eggplant parm sounds yummy too. LOL Oxy, I love your I'm not cooking and you can't make me! :)

    Sorry Faye, I'm winging it this week, although tonight I think I'm having spinach salad with bacon, sliced hard-boiled eggs, sliced mushrooms (raw), grape tomatoes, red onion slices, and blue cheese dressing. Last night was the dreaded mac & cheese with a sauteed veggie concoction on the side, so I have to atone soon with something resembling meat and potatoes LOL ;)

    Lol, Sam. We've been doing a lot of crock pot meals since this hear kicked in. I haven't turned my oven on once!

    My electric bill can't take any heat generation. The kids have been/will be scrambling eggs. I'm sticking with salad and sandwiches. I might grab take-out or a rotisserie chicken later in the week. I'm not cooking, and you can't make me, neenur, neenur, neenur.

    We are going to the fireworks in Garner tomorrow night & I'm taking hot dogs-the ones that were B2G3 at HT along w/a bag of Lays chips that were the same. Throw in a 2 ltr of Pepsi I bought at CVS for $1 last week & that's a cheap & easy picnic meal. :)
