Monday meal plan 6/25

This week we'll be enjoying a new addition to the meal plan: Chile Lime Chicken Burgers! We are also having teriyaki tofu, rosemary parmesan baked chicken salmon and more! What's on your menu?

Monday

Chile Lime Chicken Burgers from Trader Joe’s (in their freezer section) They were on sale for $3.49 for 4 burgers on Saturday.  We were at Trader Joe's to pick up some of their organic tomato soup and tofu and they were sampling the Chili chicken burgers. My 10 year old loved them and they were on sale for a decent price so I picked up a box. They have 150 calories and 6 grams of fat each so much healthier than a regular beef burger. I don't usually like anything ground, but these are very lean and tasted great.

Homemade veggie pizza

Tomato and cucumber salad

Some kind of fruit - not sure yet

    I had a fiesta with some chili lime burgers and broke the wholly guacamole I've been storing up in my freezer. The kids loved it. So did the adults, but of course that could have had something to do with the margaritas.

    M: out on a date with my 5 year old son (Med Deli in Chapel Hill) T: Homemade pasta sauce and spaghetti W: taco night and refried beans Thursday: Tuna Sandwiches and broc Friday Black bean and Quinoa salad

    Ps: if you are trying to beat the heat we had this the other night. It is a little fussy but if you have all of the oils, etc on hand it is really inexpensive:

    I just discovered her website, Lasata. Good to know you have tried and liked her recipes. The Chipotle Chicken salad sounds delicious!

    The only meal I have planned for this week are stuffed peppers. We hit Mae Farms at the farmer's market yesterday, and they had bulk Italian sausage in stock, as well as links (their Italian sausage aren't cheap, it's pastured pork, but eating it is almost like having a religious experience, SO good), so we grabbed some. Several of the farmers had large, gorgeous looking green peppers for $1 each, so we grabbed some of those too. I normally do my peppers with a bread stuffing (it's what I grew up on), but using the sausage isn't a stretch, so I'm going to have a go at it tonight. I'll still do some with straight bread filling for the vegetarian kid. I pan fry them, they're just better that way. Always better the next day, so here's hoping there'll be leftovers (not likely).

    I love iowagirleats. I have tried many of her recipes and they are all so good! I love her salads, especially her chipotle chicken salad.
