Monday meal plan

On the meal plan this week is grilled steak, salmon burgers, homemade pizza and more!  Now that the kids are home for the summer and the heat is kicking in, I'll be making less in the oven and more on the grill.

My 10-year old and I are going to make a big batch of zucchini bread and banana bread today to freeze. We have some very ripe bananas and I need to use them today and we still have some zucchini left over from the Aldi sale last week.

Tuesday

Cheese ravioli with pasta sauce (Celentano frozen light cheese ravioli, 22 oz is BOGO through 6/12 at Harris Teeter for $2.74)

Steamed carrots, price matched baby carrots, .99/lb at Walmart last week

Sliced oranges

Wednesday

Sandwiches (HT has packaged deli meat Buy 2 Get 3 Free through 6/11)

Pasta salad with veggies

Peaches (.99/lb at HT through 6/11)

Thursday

Grilled steak (bought on sale about a month ago and kept in freezer)

Rice

Grilled squash, onions and mushrooms

Friday

Homemade pizza

Tomato and cucumber salad

Fruit – not sure what yet

Lastnight we ended up having squash, zuchini, onions, and peppers with the chicken instead. It was delish!

Monday-Cheeseburgers, green beans

Tues-crockpot bbq chicken, brocoli, rice

Wed-leftovers

Thurs-smoked sausage, peppers, onions, not sure what else

Fri-maybe bb ribs (have some in the freezer), or hot dogs, fruit

Thanks for sharing your recipes, foodgirl and Kathy! The sweet and sour chicken sounds great, Kathy! So does the pesto salmon, foodgirl!

I made a departure from the meal plan today...gasp! Spinach enchiladas sounded really good to me today so I axed the salmon burgers and in a moment of wild meal plan abandon...made enchiladas. I already had everything at home so there was no additional cost and everyone was just as happy. Actually, our 10 year old, who does not like salmon, was much happier. They were muy bien!

M: roasted chicken, green beans, homemade biscuits T: Pesto Salmon and roasted veggies on the grill, W: chix/black bean quesadilla TH: pasta and sauce F: headed to NYC for the weekend

Made sweet and sour chicken today. It was very, very good. http://allrecipes.com/recipe/sweet-and-sour-chicken-i/ Only change I made was putting Mrs. Dash garlic and herb directly onto the chicken before dipping in the flour mixture.

Thinking of barbecue ribs one day. Not sure the rest. 16 year old asked for shrimp fettuccine alfredo. May do that one day.

We cook outside year-round...I try not to turn the oven on unless I have to :)
