Aldi's fabulous produce deals this week include 29-cent cucumbers, 49-cent bags of baby carrots, grape tomatoes for 69 cents per pint, multi-colored peppers for $1.29 per 3-pack and more!   These deals are valid 5/9 - 5/16.

Weekly deals

Cucumbers, .29 each!

Baby carrots, .49 per 16 oz. package!

    hummerjojo-the stuffed peppers are very easy and are so healthy!
    cook quinoa according to directions (I use vegetable broth instead of water to give it more flavour).
    Remove the tops off of the peppers, remove seeds. Bring a pot of water to boil and blanch/boil the peppers for about 5-6 minutes.
    Heat a tablespoon of EVO and add 3/4 C diced carrots. Cook until slightly soft then add 1/2 diced red onion or vidalia (I usually combine half and half) and cook until soft.
    Thaw and drain a frozen box of spinach, drain a can of kidney or black beans. Add to carrots/onions. Mix in cooked quinoa and add seasoning. We like things spicy so I usually add some cayenne and a a dash or two of Tapatio (Mexican hot sauce).
    Fill peppers with the mixture and place in baking dish. Top with fresh grated mozzarella cheese. Add a litle water to bottom of pan to help the peppers not burn. Bake for about 25 minutes at 350 degrees.
