This week we are eating salmon burgers, Southwestern baked chicken, baked sesame ginger tofu and more! What's on your menu? 

Meatless Monday

Veggie Burgers

Whole wheat pasta – Barilla whole wheat pasta free at HT and Lowes super doubles through 4/24 with Barilla coupon on their Facebook page

Asparagus – on sale last week


Baked sesame ginger tofu using the recipe HERE - good deal at HT with Nasoya coupon on their website

Egg rolls – Kahiki BOGO at Lowes recently with $1 coupon from Penguin coupon display

Steamfresh Asian Medley veggies


Salmon burgers – on sale BOGO at Lowes a couple months ago

Brown rice

Steamed carrots - $1.17 for a 2 lb bag at HT every day


Baked southwestern chicken using Kraft Fresh Take breading/cheese mix (we tried the Italian Parmesan variety on Sunday night and everyone loved it! AND it was super easy!)

Sweet potato fries – Ore-Ida on sale for $3 at Lowes and used $1 coupon from Penguin coupon display (found in stores a couple months ago) = $1 per bag



Veggie pizza night! I am working late at the Southern Women’s Show so hubby will be in charge of pizza, orange slices and leftover salad.

    foodgirl-both the quinoa salad and the quesadillas are easy to make! I don't really have recipes since I just dump things together, but below are approximate measurements. enjoy

    2 skindless/boneless chicken breast
    3 pineapple slices (I always use fresh, but you could use canned)
    1-2 jalepenos/sliced
    4 large tortillas (I use wholewheat, but you can use whatever you like)
    1/2 Cup pepperjack cheese
    1/2 Cup BBQ sauce (I usually make my own that lasts a long time, but you could use store-bought) 1/3 Cup cilantro

    Grill chicken & pineapple together on foreman grill. Shred chicken & layer chicken, pinapple, peppers onto tortilla. Sprinkle on cheese, BBQ sauce, & cilantro. Top with second tortilla and put back on foreman. Grill until browned.

    Quinoa Salad:

    5 ounces red quinoa 1/2 Cup diced eggplant 1/2 Cup diced cucumber 1/4 Cup diced tomotoes 1-2 garlive cloves, minced 1 can chick peas, drained 1/4 Cup sliced black olives 1 Tablespoon EVO 1/4 Cup feta cheese

    M - chicken, broccoli, rice casserole, T- Pasta with broccoli rabe W- hot dogs and green beans Th - tofu, red pepper and couscous Friday - homemade pizza (pepperoni for my son and broccoli rabe, carmelized onions and parmesan cheese for the adults)

    nakabi - could you post your quinoa salad recipe. Your quesadillas sound yummy as well!

    T-Edamame pasta salad with sweet honey dressing, baquettes
    W-Asian chicken lettuce wraps, brown rice
    Th-Grilled salmon, quinoa salad
    F-BBQ chicken & pineapple quesadillas, Spanish rice, pinto beans

    pss3 - I totally agree. It's very tasty and easy, but would never pay full price. I got them for .50 each after doubled $1 coupon I got from Vocal point. It's definitely worth 50 cents.

    We love the Fresh Take too! Not sure I would pay full price for it but with a doubled coupon it is really worth it. The bacon cheddar ranch makes really tasty wings.
