This week we are having Southwestern breakfast burritos, rosemary and parmesan baked chicken, turkey sandwiches, and more! What's on your menu?

 

Monday

Turkey sandwiches

Steamfresh pasta and veggies (on sale BOGO last week with .50/2 coupon)

Steamed carrots ($1.17 for 2/lb bag at Harris Teeter every day)

Tuesday

Breakfast for dinner!

Southwestern scrambled eggs, cheese, veggie sausage, sautéed green peppers and onions on tortillas with salsa (eggs were .25/dozen during recent sale with coupon)

Spanish rice

Apple slices

Wednesday

Rosemary and Parmesan baked chicken using Kraft cheese and breading mix

Whole grain pasta (free during the last Lowes Foods super doubles)

Broccoli

Thursday

Leftover chicken with rice and veggies (very busy Thursday night so not a lot of time to cook)

Friday

Pizza night – homemade pizza using HT pizza dough

Salad

Leek and Asparagus Quiche: 1 TBS olive oil, 1 cup thinly sliced leeks, 2 cups asparagus, sliced into 1/2" rounds, 1 pie crust, 1 1/4 c whole milk, 1 c heavy cream, 6 large eggs, 1 tsp salt, pinch of nutmeg, 1 cup cheese (gruyere is what I used but I think cheddar would work fine)

Saute leeks in olive oil for 3 min, add asparagus for another 3 min. Set aside

In a large bowl, whisk together milk, cream, eggs, salt and nutmeg. Whisk in 1/2 cup of cheese.

pour vegetables in the pie crust in 9" round, then pour egg mixture over the veggies, top with remaining cheese and pepper.

Bake 45-60 minutes, Rest for an hour before serving

I think you could lighten up the recipe with lower fat milk, and less cheese but I haven't tried. You will probably have a little egg mixture left over the original recipe calls for a 10" pie pan.

Ladies - no real recipe for the rosemary parm chicken - I am just following the directions on the back of the Kraft Fresh Take package. I think I can handle this one!

Oxy - I picked up some asparagus at HT today so we will have that with the chicken on Wednesday instead of broccoli. My 10 year old told me today that her favorite vegetable is roasted asparagus! So awesome!

Only thing I'm certain of is that I'll be eating asparagus. I love asparagus, and it's on sale at HT. :D

Hollyautry- the four cheese is great in burgers, I love all of the fresh takes...makes an easy meal so good!

those Fresh Takes mixes are soooo good! I've tried the Southwestern, Italian Parm and last night we used a 4Cheese one in some ground turkey burgers, yummo!

M - Rotisserie Chicken from FL sales a few weeks ago .67 lb, pasta salad. T- Pork chops in slow cooker (http://allrecipes.com/recipe/slow-cooker-pork-chops-ii/detail.aspx), wild rice, asparagus. W- Chicken and dumplings (from leftover rotisserie), mixed veggies, salad Th- Leftovers. Fri - Not sure. Maybe steak from Golden Corral takeout, (salad, veggies at home)
