Monday meal plan

It's spring break week here, so although I am doing a meal plan, it's a very flexible one.

Here are the 5 meals I am planning for the week. Depending on our activity schedule, the day we eat each meal may be different than what I am indicating below. But - we'll be eating the meals below - just not really sure which day they will be served. Sometimes it's nice to have a little extra flexibility!

What's on your menu this week?  If you have any favorite Easter or Passover dishes or recipes, please share them!

Monday

Chicken Parmesan using the $1.66/lb chicken from HT through 4/3 and the Kraft Fresh Taste I got for free (using a coupon from Vocalpoint.com, I think)

Whole grain pasta

Salad

Tuesday

Breakfast for dinner with omelets, veggie bacon, whole wheat toast or biscuits, fruit salad (the .99 pineapple from Aldi is delicious!)

Wednesday

Teriyaki tofu and vegetables – tofu free at HT during triple coupons

Brown rice

Egg rolls (Kahiki egg rolls from Lowes Foods when BOGO with $1 Penguin coupon display coupon from last week)

Thursday

Spaghetti with vegetarian meatballs

Sugar snap peas

Friday

Boneless eye of round in crockpot

Crockpot veggies including sweet potatoes, white potatoes, carrots, onions, mushrooms

Matzo ball soup

Strawberry cheesecake

    nakabi - is the matokye a steamed plantain dish? The description I found online look really tasty. I agree - those peppers were a great deal at Aldi! I used the yellow one in pasta salad the other day.

    Queene - here is the easy chicken parm recipe I use. I am amending it to include the Kraft Fresh Taste breading (which I have not used before) but I am not pre-browning before baking.

    jrwachholz - I cook the veggies in my large crockpot with the boneless eye of round, about 24 oz. beef broth, pepper, garlic, bay leaves on low for about 7 hours. Then I mix together 8 oz sour cream with 1/2 cup flour and 1/2 cup water to thicken and cream it up. Before adding it to the main crockpot, I add about 1/2 cup of the beef broth to the sour cream mixture and stir. Then I add the sour cream mixture to the main crockpot and cook for about 20 minutes after the meat is done. It makes a thicker, creamier gravy that is so delicious on the meat.

    I always start with Sunday cause I do a lot of cooking on weekends so we can have some leftovers during the week.
    Sun- buttermilk waffles for breakfast, rachael ray recipe for Mac n cheese with chicken and broccoli with apples for kids dinner (hubby had a salmon burger)
    Mon-marinated chicken with grapes, pineapple and couscous with cranberry and walnuts salad
    Tuesday - dinner out maybe with friends , kids eat free at red hot and blue, one of our faves!
    wed - hot wings and barbeque chicken wings, southern style green beans and garlic biscuits
    Thurs- leftovers
    Good Friday- something with shrimp Sat - hope to get a date :) Sunday- happy Easter! No idea yet!

    I really need a new crockpot! Its killing me my big one broke just in time for the holiday.

    Mon: Tofu stirfry, Tues: Chicken Enchiladas Wed: Pasta with homemade marinara Thurs: Egg/Chz/Bacon English muffins with smoothies Friday: homemade Pizza, Pepperoni for my son and olive oil, carmelized onions, spinach and goat chz for the adults Saturday: Pot Stickers and asparagus

    The chicken parmesan sounds good!

    M-Eggplant ziti, garlic bread, salad
    T-Nkoko, matokye (tradtional food from back home)
    W-Chicken tajine, french bread
    Th-Lamb curry, naan bread
    F-Leftovers
    Sat-Stuffed peppers (great deal at Aldi)
    Sun-Homemade veggie pizza
