Monday meal plan 3/19

This week at the cafe', I won't have time to do a lot of heavy duty cooking so we have some easy selections everyone likes!


Turkey sandwiches

Pasta salad



Whole wheat spaghetti and Veggie Patch vegetarian meatballs (pasta was free at Lowes Foods during super doubles a month ago and veggie meatballs are BOGO for $2 at Lowes Foods through 3/20)

Spinach salad (Dole 9 oz spinach $1.50 at Food Lion through 3/20, roma tomatoes .98 at Lowes Foods through 3/20)


Southwestern breakfast burritos (scrambled eggs, cheese, green peppers, onions, veggie sausage, salsa)

Baked sweet potato fries

Orange slices


Teriyaki tofu (should be free at Harris Teeter triples starting Wednesday with printable coupon)

Stir-fry veggies (green peppers, mushrooms, onions, carrots)


Egg rolls (Kahiki egg rolls BOGO at Lowes Foods through 3/20 - $1 coupon from penguin coupon display = .70 per box of 4 egg rolls)


Pizza night!

Freschetta pizza

Steamed carrots

Pear slices

    Erin: the duck sounds good! I like to make a duck curry that's really tasty.
    M-Leftover vegetable lasagna, salad
    T-Chicken curry, roti, brown rice
    Th-Grilled salmon/salad
    F-Prawn curry (hubby's request), brown rice
    Sat-Fish tacos, brown rice, pinto beans

    I entertained on Saturday and stayed very budget friendly. Hosted 13 people for dinner (chicken, spinach salad, roasted red potatoes) and snacks (carrots, hummus, grapes, cheese, chips, crack3r chips, salsa, nuts, chocolate cake) and stayed under $30. If I baked at home and made my own cake, it would've been $18. BUT of that $18 of food, there were leftovers, so we are using them this week.

    M-left over chicken over spinach salad with salsa instead of dressing. Carrots sticks and hummus.

    T-Stir fry with leftover carrots, spinach, chicken, and grapes with a pineapple curry sauce and brown rice.

    W-Roasted red potatoes with boca sausage, and steamed vegetables.

    Th-Whole wheat pasta with homemade pesto, fresh cut veggies and salmon.

    F-"Ficken" Parmesan with morningstar chicken patties and cheap cheese from HT this week.

    Sat-I'm going to make a duck. I found it at the Asian market this weekend for $9.00. Spinach salad, soy ginger noodles.

    Sun-Leftover duck, salad.
