Monday meal plan

This week, we are enjoying eye of round roast, grilled chicken, veggie burgers, whole wheat spaghetti, baked ravioli and more! What's on your menu?

Monday

Sandwiches – Morningstar veggie burgers were an e-Vic deal for me this week for $2.77 each - .75/2coupon

Bolillo rolls at Lowes Foods BOGO for $2.00

Sweet potato fries

Broccoli florets

Tuesday

Whole wheat spaghetti (oldest daughter requested it) and marinara sauce (pasta was free from Lowes Foods super doubles a few weeks ago)

Salad

Apple slices

Wednesday

Boneless eye of round roast

Homemade mushroom dressing with whole wheat bread

Steamed carrots

Thursday

Baked ravioli (I am working late and need something I can make ahead and they can easily rehet after soccer practice – this is perfect. Celentano frozen ravioli, 13 oz are BOGO this week at HT for $1.49 through 3/13)

Sugar snap peas

Friday

Grilled chicken with herb and garlic marinade ($1.99/lb last week at Lowes Foods)

Macaroni salad

Cantaloupe

    erin - it happens to all of us at times. Life gets in the way of the most perfectly laid out meal plans. Looks like you have a great plan for this week. The shrimp and salmon sound wonderful!

    I am adding veggie meatballs to the pasta and marinara tonight. The Veggie Patch veggie meatballs are BOGO at Lowes through today for $2, so I'll throw some of those on the pasta for some added protein and flavor.

    So far this week I have been extremely lazy about hammering out my meal plan! Tonight we had Marinara Sauce (I canned it last summer) with TJs mini meatballs (really good!) on whole grain pasta. I split kaiser rolls and made garlic bread. I had a handful of fresh, raw broccoli and cauliflower with ranch with it. I have NO CLUE what is on tap for the remainder of the week!

    Last night was roasted chicken with rice and a salad with the last of the free greens I got, tomatoes, green olives, red peppers, and those little fresh mozzarella b*lls, tonight is soy sauce marinated london broil on the grill(got a huge steak at FL for like $7 yesterday), mashed potatoes, asparagus. Tomorrow will be leftover steak turned into Asian-style steak salad with leftover rice, snow peas, water chestnuts, broccoli. I have a little leftover chicken that will be turned into soup I think. Maybe a corn-chicken chowder. Poetically, I like your style of cooking and having leftovers. It is nice not to have to start from square one every night! I like the idea of your chicken alfredo and maybe will use that for our leftover chicken. If I don't use the leftover rice in the steak salad, I'll make rice pudding.

    I failed miserably at my ideal meal plan last week. Between working late and helping out a friend on Tuesday, our week turned into fast food, sushi, and a night out with the inlaws. I still stayed within our dining out budget, but back to the drawing board for this week's meal plan.

    M-Got shrimp and salmon with a Capital Seafood Market groupon yesterday, green beans $0.79/lb at Kroger last week, brown rice.
    T-Spinach Salad with grilled chicken
    W-"Ficken" Parmesan with Morningstar chicken patties, whole wheat noodles, sauce, and shredded cheese
    Th-Buffalo chicken mac n cheese
    F-Brown Rice, Korma Sauce, vegetables, salmon
    Sat-Having friends over. Making either soup or chili with lots of cheap and free snacks from prior sales and super doubling events.
    Sun-Leftover soup or chili and some grilled cheese.

    M-Venison burgers (courtesy of my wonderful husband who loves to hunt, sweet potato fries
    T-Grilled salmon (great buy from Aldi's), steamed broccoli, quinoa salad
    W-Pescadito frito (Mexican fried Tilapia),Mexican rice, & frijoles
    Th-Stuffed peppers, Spinach/strawberry/almond salad
    F-Chicken divan, sugar snap peas

    Monday-grilled lemon chicken and steamed veggies/ tuesday-leftovers/ wednesday-chicken alfredo garlic bread and peas/ thursday-lefovers/ friday- homemade pizza/ sat- bbq ribs macaroni and cheese and collard greens/ sunday-leftovers.
    It's just myself and my four year old so we get a lot of leftovers!LOL
