Our menu this week includes chicken...and more chicken. You'll also find some fish, eggs, whole grain pasta, lots of veggies and fruit and more chicken! What's on your menu this week?





BBQ slow cooker chicken (see recipe below) – using Sanderson Farms chicken breast on sale at Lowes Foods for $1.99/lb through 3/6


Steamed carrots – 2 lb bag of carrots from Harris Teeter is $1.17 regular price


Bird’s Eye Chicken Voila – BOGO at Harris Teeter through 3/6 and used $1.85/1 coupon available on couponnetwork.com recently

Sugar Snap Peas – Green Giant frozen boxed .60 on sale with coupon last week

Apple slices – .99/lb at Kroger this week


Chicken Parmesan – using $1.99/lb chicken breasts from Lowes Foods through 3/5

Easy Chicken Parmesan recipe on Allrecipes.com found HERE.
In addition to the listed recipe ingredients, I added a 4 oz. can of sliced mushrooms drained, ½ green pepper diced, ¼ onion diced, garlic powder, Italian seasoning and pepper to taste. I usually cut the chicken breasts in half to lessen cooking time.

Egg and cheese tortilla roll-ups – (using .99/dozen eggs from HT e-VIC deal good through 3/6)

Easy Crockpot BBQ Chicken Recipe

You can use beef, chicken or pork in this delicious and easy barbecue recipe.

1 and ½ to 2 pounds boneless, skinless chicken breast, fat trimmed off
½ bottle of your favorite barbecue sauce
½ onion, chopped
½ tsp. Garlic powder
Salt and pepper to taste

Put chicken breasts in slow cooker. Season with garlic, salt and pepper. Pour barbecue sauce over meat and add onion. Cover and cook on Low for 7 to 8 hours, until fully cooked and tender. Check at 7 hours to see if done. Serve whole or pull apart to make BBQ sandwiches. Serves 4. Delicious!

    F-Buffalo Chicken mac n cheese (Aldi chicken, have had Annie's Mac N Cheese in the pantry, Frank's red hot (free during BOGO sale w/ coupon at HT last year). Spinach salad.

    S-Crock Pot meal; cheap chicken, potatoes ($1.19 for 5 lb bag at Aldi), carrots, onion, green peppers, and creamy sauce (made with Greek Yogurt-$0.99 at Aldi two weeks ago for 17.3 oz container, salt, pepper, basil, chicken broth). Served over either brown rice or noodles.

    S-Shrimp & Grits (Have a Groupon for Capital Seafood that I need to use. Grits from Whole Foods bought with Groupon a couple of months ago.)

    M-Leftover soup from yesterday. I made baked potato soup using Aldi potatoes $1.19 for a 5 lb bag. We fed 6 people last night, have leftovers for lunch, and are repeating tonight. Cheap soup! And spinach salad ($0.69 for 9oz bag at Aldi).

    T-Chicken Satay Skewers (Boneless Skinless Breasts on sale at Aldi $1.69/lb, Satay Kit free during super doubles/close out sale), fresh green beans ($0.79/lb at Kroger), brown rice.

    W-Spinach Salad with Salmon ($3.99 for 4 pcs of frozen salmon at Aldi), fresh mushrooms $0.59 at Aldi, green pepper $0.50 at Kroger, avocado $0.89 at Aldi. (Remainder for lunch for my husband and I the next day)

    T-Whole Wheat Pasta (free during super doubles), pasta sauce (free Wolfgang Puck using raincheck and coupon). Steamed zucchini, squash, mushrooms (cheap at Aldi).

    I am only up to Wednesday on my meal-planning also. Tonight will be Sunday's leftovers. Tuesday will be onion-crusted chicked with macaroni and cheese and steamed broccoli. Wednesday I will do ground turkey sliders with celery sticks and carrots. I am thinking Thursday will be our big carbs day, with fettucine alfredo and a veggie medley. Friday I might do tacos with raw spinach on the side...but haven't worked it out quite yet. Who knows what we will do for the weekend...

    Only have ideas for a couple of days so far. Tonight will be homemade cream of tomato soup and grilled cheese on challah bread. Tomorrow will probably be grilled boneless chicken breasts on baby greens - got a great coupon from Earthbound Farms a while back, so a huge container of salad was almost free. I'll probably make extra chicken and will have that with brown rice and baked spinach-stuffed tomatoes. I have a chuck roast in the freezer that will also turn into beef stew with dumplings one night. I got some beautiful portobello caps on sale -- does anyone have some good ideas or recipes to use them?
