Monday meal plan 2/20

Our menu this week includes eye of round roast, salmon burgers, lasagna, taco night and pizza night! What's on your menu? 

Monday

Leftover eye of round roast from last night

Roasted veggies (carrots, onions, sweet potatoes, zucchini and squash)

Whole wheat pasta salad – free pasta at Lowes Foods super doubles last week

Wednesday

Lasagna – Stouffers family size lasagna on sale with e-Vic discount for $4.97 in early February. I had a $2 coupon making it $2.97.

Taco Night!

Everyone loves it when we have a taco bar with chicken, cheese, lettuce, spinach, tomatoes, green peppers, black olives, onions, rice, salsa, light sour cream, soft tacos, crunchy corn tacos and anything we can find that might taste good in a taco!

Orange slices (on sale for $1.39 for 4 lb bag at Aldi through 2/21)

Friday

Pizza Night!

Semi-homemade pizza using a wheat dough ball from Harris Teeter. See recipe for cooking the crust below. I’ll top it with pasta sauce, black olives, mushrooms, onions, green peppers and cheese.

Steamfresh broccoli or sugar snap peas

Fruit – depends on what goes on sale Wednesday

Recipe: Homemade pizza using dough ball from grocery store

I usually buy my pizza crust whole wheat dough balls from Harris Teeter in the deli department. They are usually frozen. One to two days before using, thaw dough ball in fridge. Roll out onto pizza pan or cookie sheet with lightly oiled rolling pin. Lightly coat edges of crust with olive oil. Season with garlic powder and Italian spices all over crust, if desired.

Pre-bake crust in 400-degree oven for about 7 minutes. Remove crust from oven and put on sauce and desired toppings. Bake until cheese is melted, approximately 10 – 12 minutes. Enjoy!

    I've made a similar taco pie for a while and last year a co-worker suggsested I make it in a round casserole dish so I wouldn't have to cut or overlap the tortillas. Genius idea! Also, it makes it really easy to scale for dinner for two (small tortillas) or 10 (make 2 casseroles).

    ahh the pizza dough. I wanted 2 or 3 of those as well on my trip to Carrboro's HT on Friday. They only had one. :-( OH well, at least I got one. I'll take it. ha!

    The Stouffer's chicken broccoli pasta bake is really good too!

    I invented a new casserole over the weekend that was so good! I know there is probably a recipe for it somewhere but the idea just popped in my head. I am calling it "Taco Pie"

    Line your casserole dish of choice (mine is an 11x13 pan) with corn tortillas (I cut them into rectangles to help them fit better), then I added a layer of ground beef cooked with taco seasoning, a layer of brown rice, a layer of cooked onions/mushrooms/peppers, and then a little bit of shredded monterey jack cheese. I then put another layer of corn tortillas and all the fillings. I topped it with extra cheese and baked it at 350 for twenty minutes. I served it with fresh sour cream and salsa...YUMMMMY!

    My hubby really liked it too. When I told him it was only $2.97 for the whole lasanga he was very surprised.

    We got the Italian version of the lasagna with the meat on top and the cheese on the next row (vs the regular one with meat in multiple layers). Since I don't do ground beef, it makes it easy to scrape off the meat and still enjoy the lasagna. My family couldn't believe I was serving anything with ground beef until they realized I could scrape it off the top and give it to my husband! LOL

    We had some of that Stouffer's Lasagna last night for supper, and my hubby LOVED it. I have two more Q's and a Raincheck for them. I am thinking the Chicken and Rice.
