Monday

Leftover eye of round roast from last night

Roasted veggies (carrots, onions, sweet potatoes, zucchini and squash)

Salmon burgers on rolls

Whole wheat pasta salad – free pasta at Lowes Foods super doubles last week

Asparagus

Wednesday

Lasagna – Stouffers family size lasagna on sale with e-Vic discount for $4.97 in early February. I had a $2 coupon making it $2.97.

Taco Night!

Everyone loves it when we have a taco bar with chicken, cheese, lettuce, spinach, tomatoes, green peppers, black olives, onions, rice, salsa, light sour cream, soft tacos, crunchy corn tacos and anything we can find that might taste good in a taco!

Pizza Night!

Semi-homemade pizza using a wheat dough ball from Harris Teeter. See recipe for cooking the crust below. I’ll top it with pasta sauce, black olives, mushrooms, onions, green peppers and cheese.

Recipe: Homemade pizza using dough ball from grocery store

I usually buy my pizza crust whole wheat dough balls from Harris Teeter in the deli department. They are usually frozen. One to two days before using, thaw dough ball in fridge. Roll out onto pizza pan or cookie sheet with lightly oiled rolling pin. Lightly coat edges of crust with olive oil. Season with garlic powder and Italian spices all over crust, if desired.

Pre-bake crust in 400-degree oven for about 7 minutes. Remove crust from oven and put on sauce and desired toppings. Bake until cheese is melted, approximately 10 – 12 minutes. Enjoy!
