Monday meal plan 1/9

This week we will be enjoying chicken sausage, low-fat fettuccini alfredo with tofu, London broil, veggie chicken sandwiches and breakfast burritos. What's on your menu this week?

 

 

 

Meatless Monday!

Veggie chicken sandwiches on Nature’s own thin whole wheat rolls (Boca veggie chicken patties $2.99 at Target - $1/2 coupon from 1/8 inserts = $2.50 per box, rolls were in the freezer from a deal weeks ago)

Pasta salad with grape tomatoes, green pepper, onion, light mayo, pasta salad seasoning
(Barilla whole wheat pasta .50 per box from HT super doubles through Tuesday with coupon from 1/8, tomatoes from Lowes Foods buy 1 get 2 free grape tomatoes deal = $1.33 per pint, green pepper on sale at various stores for .99, Hellman’s BOGO at HT this week during super doubles and I had a $1/2 coupon from a coupon booklet found in stores months ago)

Steamed carrots

Tuesday

Johnsonville Chicken Sausages (on sale at Lowes Foods through 1/10 BOGO for $2.50 each - .75/1 coupon from 9/11 RP or $1.00 coupon from 1/1 SS = $1.00 (with .75 coupon)

Rice

Broccoli

Wednesday

Low-fat fettuccini alfredo with tofu and sautéed veggies. Click HERE for the basic low-fat alfredo recipe on The Food Network. The recipe does not call for tofu or veggies, but I am going to sauté the tofu with some mushrooms and green peppers to give it a little more flavor and protein. I am also going to use skim milk since that is the only kind of milk we drink. We’ll see how well that works.

Breakfast burritos with eggs, cheese, mushrooms, green peppers, onion, salsa wrapped in tortillas (Old El Paso tortillas are on sale at Lowes Foods through 1/10 plus use the store coupon found in sales ad this week in stores = less than $1 per package, eggs $1.29 at Walgreens through Saturday)

Hash browns

Fruit

Friday

London Broil (on sale at Food Lion for $2.49/lb through 1/10)

Baked sweet potatoes

I am really going to have a menu plan here, albeit late as I didn't get to it this weekend in time for this week, but I'm going to start planning, really! I'll be ready for next week :)

In the meantime, remember that frozen food month is March, so there should be great deals on those food items - I'm going to concentrate on using a lot of my frozen goods between now and then to make room for the new deals :)

My meatless Monday was black beans and rice, using canned beans and tomatoes from previous sales with one of those 99 cent green peppers and some fresh onion and garlic.

Monday - Leftovers from Weekend ~ made meatball/veggie soup and potato corn chowder (hubby has been requesting tons of soup/chili lately) Tuesday - Homemade Enchiladas (homemade tortillas and homemade enchilada sauce that I canned in July) and pasta salad (local veggies and cheese) Wednesday - Big Ole' Salads w/ grilled chicken & double-yoke eggs (farm @ McGee's)& lots of veggies Thursday - T-Bones, baked potatoes, collards (put up last month in freezer), Brussel Sprouts (put up last month in freezer - LOVE when TJ sells them on the stalk), Friday - I think hubby has a gig, so I will be eating leftovers from the week.

Mon - Sloppy Joes (finally made a big batch this weekend), Cheesy Hashbrown potatoes (free), sliced oranges, a green giant frozen veg

Tues - Turkey noodle soup (made from leftovers), grilled cheese sandwhiches, some type of fruit

Weds - Chicken Tacos

Thurs - pot roast in crockpot using meat from some good sale

Fri - eat out possibly??? or pizza using HT pizza crust
