Monday
We have a busy night so it's an easy meal on the menu this evening.
Chicken breast tenders (on sale BOGO at Lowes for 24 oz container in meat department for $2.50 through 12/13)
Baked sweet potatoes (bought from local farmer)
Broccoli
Tuesday
Crab cakes
King crab bisque
Asparagus (PictSweet frozen asparagus spears on sale BOGO at Lowes Foods through 12/13 and used $1/2 coupon from Penguin coupon display found in stores recently)
Herb bread (free Fleishmann's bread mix using the coupon from a couple months ago)
Wednesday
Smoked (light) turkey sausages on rolls topped with sauteed mushrooms, onions and green peppers (Johnsonville sausages bought on sale with coupon a couple weeks ago)
Pasta salad with tomatoes, green peppers, black olives, onions, light mayo and spices
Tangerine slices
Thursday
Veggie Lasagna or Ravioli (we'll see what everyone is in the mood for) - frozen light cheese ravioli on sle at Lowes Foods BOGO through 12/13
Salad
Friday
Breakfast for dinner!
Breakfast casserole (with eggs, cheese, veggies and veggie sausage) - see recipe below

Breakfast Casserole Recipe
Ingredients
1 box or 2 bags of croutons, seasoned (I often use 2 bags of New York Texas Toast Croutons)
1 green pepper or red pepper (if on sale), diced
1 can mushrooms, 4 oz., sliced
½ onion, diced
½ box Boca Sausage Links (vegetarian soy based links found in freezer section), cooked and sliced
(Cook 5 Boca links in microwave for 1 minute) – of course you can also use real sausage if you prefer or no sausage at all
4 oz. shredded cheese (Cheddar or 4 Cheese Mexican cheese work well)
12 eggs
2 cups milk (I use skim milk or ½%)
Garlic, pepper and Italian spices to taste
Place croutons on bottom of 9 x 13 inch pan. Put veggies over croutons. Spread sausage over veggies. Sprinkle cheese evenly over pan. In a large bowl, mix eggs, milk and spices together well. Pour into pan. Bake at 350 degrees for 45-55 minutes until browned and set. Let stand 5 minutes.
