Monday meal plan

On the menu this week we have turkey enchiladas, crab cakes, veggie pizza, baked salmon and baked ravioli. What's on your menu?




Turkey enchiladas using leftover turkey. Click HERE for the recipe.  I plan on adding a can of corn to the turkey mixture and then topping with chopped fresh tomatoes and black olives after they have baked, just before serving.


Clementine slices


Crab cakes (from Groupon seafood place deal a couple months ago)

Clam chowder

Steamed carrots

Multi-grain bread (free Fleischmann’s bread mix with coupon from paper a couple months ago)


Homemade veggie pizza on whole wheat crust (crust from Harris Teeter on sale for .99 a few weeks ago in deli section and stored in freezer)

Broccoli with parmesan

Apple slices


Baked salmon

Scalloped potatoes

Sugar snap peas


Baked ravioli (BOGO Celentano frozen light cheese ravioli at Harris teeter last week)

French bread

    We love crab cakes, too, amomoftwo! That bread will be great dipped in the soup.

    Oxy - I expect we will see another round of turkey deals as we get closer to Christmas, but not as good as the Thanksgiving deals. I bought an extra turkey breast from Target when they were .99/lb a couple weeks ago because they don't usually go any lower than that. Sorry you missed having the "honor" this year. Hopefully that means you got to relax and enjoy the holiday a little. Having the "honor" was exhausting this year!

    What? You're only eating turkey once this week?

    As a pseudo-aside, anyone seen any spectacular prices on turkey and/or turkey breasts since Thanksgiving?

    The one major downside of getting out of ... I mean not having the honor of preparing the bird is that I don't get to keep the carcass.

    Faye, I will be right over on Tuesday night for dinner! HA HA...I love crab cakes and the new Fleischmann bread mix is THE best! Thanks for sharing your meal plans with us each week...it's always inspring to me to read what everyone is doing with all our great deals.

    Well for tonight, I am making a ham and swiss casserole.

    Ham - leftovers
    Swiss cheese
    Dreamfields Pasta (BOGO at Lowes Foods plus a $1.00 off coupon)
    Generic Alfredo sauce

    Mixed together and baked.

    Not sure about the rest of the week as we still have a lot of leftovers to get through. I may make some more stuffed ham and cheese slices though since I have everything at the house still. (ham and cheese stuffed in unrolled crescent roll dough)

    mytrish - I think I bought it at Food Lion. MY HT did have a space for it but they were always sold out.

    Faye, where did you find the Fleischmann’s bread mix? I couldn't find it at Kroger or HTeeter.

    made a turkey breast Weds night since we were not home Thanksgiving Day. Fed 7 on Weds, had sandwhiches 12:45am Friday morning, and leftovers that night for dinner. The turkey is gone except for the bones which will be a base for soup. So sad that we do not have leftovers for this week. I was counting on them. I know we are having spaghetti and meatballs tonight and Friday will be hotdogs with mac & cheese. Not really sure what will be the next few nights.

    dkg - I bet your dogs love Thanksgiving! I am freezing whatever turkey is leftover after tonight. It will resurface sometime in the next couple months. The dog will get some of it before it goes to the freezer, though.

    turkey pot pie tonight...then the dogs can enjoy the remainder of the turkey...we've had it every day since Thanksgiving and I'm sick of it! ;o)
