Monday meal plan

On the menu this week we have quesadillas, salmon, honey teriyaki tofu, chicken parmesan, and pizza night. What's on your menu?

Monday

Cheese quesadillas

Rice

Creamed spinach

Tuesday

Honey teriyaki tofu with stir fry veggies

Rice

Tangerine slices

Wednesday

Chicken parmesan

Noodles

Broccoli

Thursday

Pizza night – I’m working late so an easy meal is in order

Fruit

Friday

Baked salmon – this was on the menu last week but we made something else, so here it is again!

Pasta or rice

Salad

Saturday and Sunday

    I made up our 2011 Thanksgiving Dinner menu this evening. With a full house, I need to take inventory of everything I need and this was the first step. I am so looking forward to that turkey, homemade stuffing, corn casserole..... I'll post the menu Thanksgiving week. Doing the menu really got me in the mood for the holidays! Getting a .47/lb turkey today also helped!

    The sweet tater burritos do look good! Thanks for the recipe.

    The Birdseye Chef Favorites Mushroom Risotto is very good but so skimpy! Our bag gave us 2 1/2 cup portions...next time I will be adding a cup of cooked rice to stretch it.

    How do you make the seet potato and black bean burritos?

    Mon - Mexican lasagna, salad, sliced oranges

    Tues - 1/2 of boston but in crockpot with apples, salad, rolls

    Wed - baked spaghetti made from a leftover mac & cheese concoction my children rejected; we will see if they like it in this form

    Thur - Oven fried Talapia, scalloped potatoes, peaches, frozen veg

    Fri - maybe pizza

    Thought I'd add our (vegetarian) meal plan in case anyone is interested. :)

    Sunday - Sweet potato and black bean burritos, arugula, guacamole

    Monday - Lentil and rice casserole (mjadarrah) with baked falafel and roasted cauliflower

    Tuesday - Leftovers

    Weds - Miso soup and spring rolls

    Thurs - Ethiopian lentils and sauteed greens

    Friday - Sloppy Joes

    pss3 - have you tried the mushroom risotto yet? It's very good.

    J - loved those .50 peppers. I added green pseppers to many dishes last week! Enjoy the seafood and have fun this weekend! And I LOVE that your hubby is baking the cupcakes!

    Our meals:
    Sunday: Cheeseburger casserole (new recipe, was ok) and green beans.

    Monday: Chicken BBQ Pizza and Salad

    Tuesday: Grilled chicken with lime juice, Birdseye mushroom risotto, garlic bread.

    Wednesday: Honey ham steak, mac and cheese, broccoli.

    Thursday: Hamburger helper, corn.

    Friday: Chicken fried rice, stir fry veggies, egg rolls.

    Saturday: Not sure yet...
