Monday meal plan 10/31

It's a new week and that means a new menu. We are having baked ravioli, BBQ chicken sandwiches, tacos, salmon and more! What's on your menu this week?



Baked ravioli - see recipe below

(13 oz Celantano frozen cheese ravioli on sale BOGO for $1.49 at Harris Teeter through 11/1. Sauce was free at HT with sale and coupons a couple months ago. Cheese was on sale at Kroger last week)

Sugar snap peas (Green giant boxed veggies on sale with coupon weeks ago)


Tacos with chicken and veggies


Tangerine slices


BBQ sandwiches with chicken cooked in the slow cooker (chicken was on sale for $1.77/lb at Lowes Foods recently)

Sweet potato fries




Garlic bread



Baked salmon

Brown rice

Sautéed veggies (depends on what’s on sale starting Wednesday)


Kahiki honey chicken (was BOGO last week at Lowes FOods with $1.50/2 coupon)

Stir fry veggies (green peppers, mushrooms, onions)


Tangerine slices


Breakfast for dinner – probably scrambled eggs, bagels, veggie bacon, fruit

Baked Ravioli

This is a super simple, frugal and delicious dish our whole family loves! Serve with a veggie or salad and that’s all you need. Below is the basic recipe. Feel free to add favorite veggies or meats to enhance it even more. I often add sauteed green peppers, mushrooms and onions or fresh spinach.  I usually use light cheese ravioli, but you could also use meat ravioli if you prefer. I have also made this without the cottage cheese and it is just as good. You can also add 1/2 a container of the Philadelphia cooking cream if you prefer a creamier sauce.


1 bag (approx 24 oz.) frozen light cheese ravioli (or 2 bags 13 oz.ravioli)

1 jar spaghetti sauce

12 oz light cottage cheese

6 oz. mozzarella cheese

2 oz. grated parmesan cheese

Italian spices and garlic to taste (I used about 1 tsp garlic powder and 1 tsp Italian seasonings)

Preheat oven to 350 degrees. Spoon 1/3 jar over bottom of 13 X 9 pan. Place frozen ravioli on bottom of pan evenly. If you have a couple extra ravioli once bottom is covered, place them on top of other ravioli. Spoon 1/3 sauce over the top of the ravioli. Mix the cottage cheese, ½ of the mozzarella cheese and spices in a medium bowl. Spoon the cottage cheese mixture on top of the sauce and ravioli and spread to cover most of ravioli. Pour the remaining sauce around the edges to cover the ravioli. Sprinkle the remaining mozzarella cheese and the parmesan cheese over the top. Cover with tin foil and bake for 30 minutes. Remove foil and bake for another 10 minutes. Enjoy!

    Faye, my son is 1 so he is just now eating table food and so far he loves everything! Myself and DH are picky eaters so we love anything that has a "make your own" option.

    I am interested in the recipe for the BBQ chicken in the crock pot. I really like BBQ and this sounds like an easy dinner fix one night. Thanks for all you do.

    I'm making chicken in the crock port now and it smells so good! Also made an apple pie (my first!) with our granny smith's from the mountains. The rest of this week will be simple fare since hubby leaves tomorrow for work. Mac-n-cheese, tortellini, grilled cheese, salad, and hot dogs for me & the girls the rest of the week!!

    pss3 - do your kids love taco bar? Mine think it's great! There's something wonderful about having all those different bowls of stuff to pick from so you can make your own special creation!

    You are welcome me2nc - you will love it! I am about to go put mine together so we have eaten before trick or treat time (hopefully not swim or treat with the rain).

    Our Meals:

    Sunday: Three cheese tortellini in a mushroom sauce, broccoli.

    Monday: Steak, oven roasted potatoes, sweet corn.

    Tuesday: Hamburger helper, green beans.

    Wednesday (my mom's birthday dinner): Popcorn shrimp, cheddar mashed potatoes, carrots, and bread (that free fleicshman's). I'm also making a double caramel cake with chocolate butter-cream icing (better workout after a slice of it!).

    Thursday: Taco bar and rice.

    Friday: Chicken BBQ Pizza and salad.

    Saturday: Not sure yet...might make a new pork chop recipe I found if I can get some chops on sale.

    Thanks for the baked ravioli recipe! Have some in my freezer and was going to look for a good recipe and this one sounds easy and delicious. Can't wait!

    Sounds yummy. We are eating at my parents tonight before trick or treating. Not sure what night we will have stuff but here is the loose plan: Spaghetti with meat sauce, Boston But pork in crockpot, Sausage and peppers (from the freezer). It is my week to be later at work so we usually eat from the freezer.
