Monday meal plan 10/10

This week we are enjoying spinach enchiladas, grilled chicken, teriyaki tofu, spaghetti and baked chicken. What's on your menu?


Baked chicken

Mashed potatoes

Broccoli ($1.29/bunch at Kroger this week – I am using Green giant frozen that was .60 with sale a coupon recently)

Apple slices (on sale for under $1/lb at Lowes Foods and Kroger when bought in 5 lb bags)


Teriyaki tofu and veggies (tofu free during recent sale with coupon)

Rice (free with sale and coupon recently)

Egg rolls (BOGO with coupon recently)


Spinach enchiladas


Orange slices (tangerines from Florida on sale at Kroger in 3 lb bag for $1.99, on sale at Lowes Foods in 4 lb bag for $3.97 through 10/11)


Spaghetti with whole grain pasta (free at last HT super doubles) and Barilla pasta sauce (free during recent HT sale with coupon). I am also adding ½ container of Philly cooking cream that was free with sale and coupons a couple months ago and has been stored in the freezer.

Spinach salad


Grilled Italian chicken

Sweet potato fries (McCain fried on sale BOGO through 10/11 at HT for $1.77)

Fruit of some sort (depends on what is on sale starting Wednesday)

Saturday and Sunday: Breakfast for dinner 1 night and not sure about the other yet.

    We made Pad Thai with our tofu. I always toss the tofu(1 lb cut in cubes) with 2T EVOO,2 cloves garlic, 1/2 tsp black pepper, 2T fresh dill or parsley-whatever I have, pinch of cayenne, 1 tsp sesame oil & 2 tsp soysauce-then bake on cookie sheet at 350 for @ 30 MIN. I store in fridge & toss in stir fry, salads, casseroles, etc. My kids & hubby will all eat tofu this way without complaining.

    Okay, Faye! I've seen that your family eats tofu pretty regularly...I've never tried it. I was raised in a household with very picky eaters and my mother never made us try new things. What can you tell me about tofu? What is it similar to? How do you suggest serving it? etc...I think I'm ready to start branching out and making my kids try new things now :) Thanks so much.

    kcampbell, my girls love the GG cheesy broccoli and rice. I add extra broccoli to mine and it's always a hit.

    I like that Friday option, pss3. What is the recipe for "Hubby will cook"? I would like to make that every night next week. ;-)

    Our menu for the week:
    Sunday: Roasted pork tenderloin, mashed potatoes, corn.

    Monday: Hamburger helper and salad.

    Tuesday: Popcorn shrimp, sweet potato fries, green beans.

    Wednesday: BBQ drumsticks, cheesy rice, carrots.

    Thursday: Hamburger pizza, salad.

    Friday: hubby will cook or we will go out.

    Saturday: Homemade mac and cheese, broccoli.

    Mon: Crockpot lasagna, salad, bread, melon from FL (.99c)
    Tues: Stuffed Bell peppers - these were made from our peppers, salad, bread, melon
    Weds: Oven fried Talapia and smiley fries, frozen green beans
    Thurs: Pork chops in the crockpot egg, noodles, GG cheesy broccoli
    Fri: Turkey and Stars veg soup from our freezer
    Sat: THE FAIR!!!
