On the menu this week we have chicken parmesan, roast beef sandwiches, spinach enchiladas, breakfast pie and more!

Monday

Chicken Parmesan served over egg noodles (chicken was from Lowes Foods 3-day sale last weekend for $1.67/lb, pasta sauce free during HT triples last week)

Spinach salad with Newman’s Own Light Honey Mustard Dressing (dressing on sale at HT for 44 cents with coupon and sale through 9/27)

Tuesday

Turkey or roast beef and cheese sandwiches (HT deli meat and cheese on sale Buy 2 Get 3 free through 9/27)

Cobblestone Mill sesame buns (on sale with .55 coupon found months ago on display = .90 per package of 8 buns)

Steamed carrots with a touch of fat free spray butter and parmesan (HT sells 2 lb bag of carrots for $1.17 every day – a great price!)

Mahatma rice (free at HT with sale and coupon months ago)

Wednesday

Baked chicken (chicken from Lowes Foods sale last weekend for $1.67/lb)

Noodle casserole

Broccoli

Sliced apples

Thursday

Spinach and tofu enchiladas (using Green Giant creamed spinach on sale during HT triples, tofu free during triples, tortillas .25 at Lowes Foods a couple weeks ago with combo of sale, store coupon and manufacturer coupon)

Spanish rice

Cantaloupe (on sale BOGO at HT through 9/27)

Friday

Pizza night – Palermos Pizza bought on sale BOGO with coupon at Food Lion recently

Tomato and cucumber salad with light Italian dressing

Orange slices (on sale at HT for $3.79 for 4 lb bag through 9/27)

Saturday

Not sure yet - waiting to see what is on sale starting Wednesday


Sunday

Breakfast for dinner

Breakfast Pie: Click HERE for the recipe on allrecipes.com. (I am using veggie bacon instead of real bacon and adding sautéed spinach and mushrooms. I am also using skim milk and low fat cottage cheese. I will probably take the advice of the folks commenting below the recipe and use shredded potatoes, not cubes.)

Fruit of some kind (depends on sales starting Wednesday)
