Monday meal plan 8/29

At Cafe' Faye this week we are serving chicken parmesan, creamy baked chicken, teriyaki tofu and veggie stir fry and more!

What's on your menu this week?




Easy Chicken Parmesan
Click HERE for the Chicken Parmesan recipe. In addition to the listed recipe ingredients, I added a 4 oz. can of sliced mushrooms drained, ½ green pepper diced, ¼ onion diced, garlic powder, Italian seasoning and pepper to taste. Chicken was on sale at Lowes Foods for $1.99/lb. I also cut the chicken breasts in half and it still took 40 minutes to cook.

Whole wheat pasta (free at HT during last Super Doubles)

Veggie tray with light ranch for dipping including baby carrots, cucumber slices, green pepper slices and grape tomatoes (most of the produce is on sale at HT through 8/28). My youngest doesn’t like “salad” but loves a veggie tray with all the same salad veggies except lettuce.

Canary melon slices (sister-in-law gave it to us because her weekly CSA produce box had too many for her to use. If you have never had a canary melon, it’s similar to a cantaloupe, although this one did not have a lot of taste).


Creamy Italian Garlic Baked Chicken (baked in 1 container of Philly Italian Herb cooking cream with added garlic and pepper and 4 oz shredded cheese added during last 10 minutes). I made this at the same time I made the chicken parmesan from Monday night’s menu. Why run the oven twice when I can batch cook all at once?!


Steamed carrots with a touch of butter and Parmesan cheese


Teriyaki stir fry tofu

Stir fry vegetables (mushrooms, onions, zucchini, green pepper)


Kahiki egg rolls (BOGO at HT and used coupon that Kahiki mailed to me upon request)


Salmon burgers

Whole wheat bread sandwich thins

Pasta salad

Fruit (waiting to see what is on sale on Wednesday)


Pizza night! I think we will make homemade veggie pizzas this week.



Not sure yet - may let the girls be in charge of dinner!


Chicken and veggie (spinach, onion, mushrooms) quesadillas


Cantaloupe (on sale at Kroger through Saturday)

    So I made the chicken parmesan tonight...it was wonderful!! Thank you so much for sharing the recipe!! It was sooo easy and very good!

    I have a recipe collecting addiction so thanks for the new recipe Faye...i still need to try some ohters you've posted too. here's my meal "plan"...Tonight - breakfast for dinner - french toast, c barrel hashbrown casserole and sausage; Tuesday - chicken and cheese chimichangas using the 39 cent chicken leg quarters from Food lion a few weeks ago, rice and beans or another round of cranberry dijon chicken, green beans and biscuits my family enjoyed on sunday; Wed - pulled bbq pork in 1 slow cooker, boston baked beans in another slow cooker and a recipe for boston market cornbread; Thursday - leftovers most likely; Friday - not sure yet. some of these recipes are posted on my blog especially my family's favorites.

    I made the Nacho Supreme Velveeta dinner with a sirloin steak that I cubed and browned. I sprinkled crushed tortilla chips over the top just before serving. Although these type of dinners aren't really my cup of tea, it was pretty good and very quick and easy. The Velveeta cheese gave it a nice, creamy sauce. I doubt I would pay full price for these dinners, but for free they are good to have on hand for quick meals.

    Thanks for sharing your plans, eje and kcampbell. I would like to add vacation at the beach to my meal plan as well, eje! LOL The chicken parm was soooo easy to make especially since there was no breading and browning involved.

    Cuttinup - .42 dinner is a good start! :-)

    That Chicken Parmensan looks good, I might have to make that this week! Thanks for the recipe. Our meal plan is: Monday -Kielbasa with peppers and onions, green beans, and baby carrots; Tuesday- Velvetta chicken skillet with some veggies or Faye's Chicken Parmensan recipe; Wednesday - Crock Pot pulled bbq chicken sandwiches with mixed veggies; Thursday- Taco night with all the fixings; Friday & Saturday- vacation at beach so will probably eat out!

    Tonight is Yakatori chicken - thanks to my sister moving I have the mirin and rice wine vinegar. I am using chickent tenders that were on sale at FL a while back. Also grilling eggplant form the garden and making fried rice. Tomorrow night is leftover mexicali porkchops. Made enough white rice that I can add some to the leftovers. Weds will probably be Ravioli. Thursday will either be Kielbasa or burgers - have both in the freezer from sales.

    your menu sounds delicious Faye! I haven't planned for anything this week except for the spaghetti that I am cooking for dinner tonight. I'm using the box of noodles that I got for $0.42 at Lowes!
