Monday meal plan 8/15

On the menu this week we have BBQ beef sausage in the slow cooker, Teriyaki stir fry tofu, Grilled chicken pasta salad and more!

What's on your menu this week?

Monday

Morningstar Asian veggie burgers (on sale at Target this week for $2.99 - $1 printable coupon that was available a few weeks ago = $1.99). There was also a $1/2 coupon from 8/7 RP

Mashed potatoes

Steamed carrots - $1.17 for 2 pounds at Harris Teeter everyday - that's only .58/lb - a very good price

Cinnamon apples (a Honey Baked Ham side dish I had in the freezer)

Tuesday

BBQ beef sausage in the slow cooker - Hillshire beef sausage on sale for $2.50 this week at HT, used $1.00 printable coupon from their Facebook page = .50!)

Whole grain rice

Spinach salad

Wednesday

Stir fry teriyaki tofu and veggies (zucchini, yellow squash, mushrooms and onion) - Nasoya tofu only 19 cents per container (we use 2 containers for the meal) with $1 printable coupon doubled at Harris Teeter through Tuesday.

Mahatma saffron rice - free with coupons

Apple slices

Thursday

Grilled chicken marinated in Italian dressing (Wishbone is .85 at HT through Tuesday with $1 coupon super doubled) - using chicken breast from freezer that was $1.75/lb from Lowes Foods a few weeks ago

Pasta salad with veggies (using Barilla piccolini pasta that was on sale at HT and Lowes Foods with .55 coupon within the last couple weeks = .40 per box)

Fruit (depends on what is on sale starting Wednesday)

Friday

Pizza night!

Salad

Saturday

Not sure yet - may be visiting with my Mother-in-law

Sunday

Breakfast for dinner - breakfast casserole (recipe is below)

Breakfast Casserole Recipe


Ingredients
1 box or 2 bags of croutons, seasoned (I’ll be using 2 bags of Texas Toast Garlic and Butter Croutons that were on sale a couple months ago with a .50 coupon)
1 green, red or yellow pepper, diced
1 can mushrooms, sliced
½ onion, chopped
6 Morningstar veggie bacon strips, cooked and crumbled (6 strips cooked in microwave for 2 and ½ minutes) – of course you can also use real bacon, bacon bits, veggie sausage, real sausage, tofu or nothing, if you prefer)
6 oz. shredded cheese (cheddar, four cheese Mexican, cheddar/mozzarella all work well)
12 eggs
3 cups milk (I use skim milk)
Garlic and pepper to taste

Place croutons on bottom of 9 x 13 inch pan. Put veggies over croutons. Spread crumbled bacon over veggies. Sprinkle approx 4 oz. cheese evenly over pan. In a large bowl, mix eggs, milk and spices together well. Pour into pan. Sprinkle remaining 2 oz. cheese over top of casserole. Bake at 350 degrees for 45-55 minutes. Let stand 5 minutes.

    Thanks Faye. With the great deal on tofu, I had to get some to try it. I am amazed how healthy the label says it is.

    Not really a recipe, arapahoecheif. I just take the Nasoya tofu out the tub it comes in. Cut it into 1/2" slices, lay it out on paper towels and soak up the water. Then I cut it into cubes, heat up some olive oil on the skillet and cook until heated. Then I put some teriyaki sauce on it (Lawry's or Ken's usually) and cook on a higher temp until it starts to get a little crispy. We like our tofu a little crispier so I cook it on a high temp. Some like it softer and cook it at a medium temp. Then I do the same thing for the veggies (the kids don't like the veggies and tofu mixed) and serve with rice. So easy - so delicious. I could seriously eat teriyaki tofu & veggies every night, I think. :-)

    Yep - they stack, Bklyn - I've coupled the mq's and store Target q's for Morningstar a number of times - love those deals!

    There is also a printable Target coupon to stack with mfr coupon on Morningstar Farms...at least, I think Target stacks....
